Bharva Baingan!

One of my fav recipes right now!! :)

Masala
1 tablespoon sauf
2 tsp salt
3 tsp dhaniya powder
3 tsp amchur powder
1.5 tsp mirchi powder
little haldi
2 tsp oil

mix well

slit the baingan top to bottom and push open.
stuff masala all the way till the middle of the baingan

heat oil in pan. add jeera
place each of the baingans carefully.
use a spoon to drizzle heated oil on baingan
cover and let it simmer on low flame
continue to turn baingan over slowly and continue cooking. at least 25 mins or so!

voila :) serve hot with dhaniya!

Pav Bhaji!

A recipe that works! :)

Mashed Vegetables
Chop large pieces of 1/2 cabbage, 1/2 gobi, 2 aloo, 1 medium carrot
Add 2 handful frozen peas
Add 3-4 tsp salt (don't add too much water in cooker)
Pressure cook 1 whistle - allow cooker to stand for 30 mins

Tomato Paste
Saute 1 clove fresh garlic
Add 1 bell pepper finely chopped
Once pepper is done, add 1 can of tomato paste (puree)
Let mixture simmer

Tadka
Melt 3/4 stick of butter in pan. While butter is melting, prepare below paste:
      2 tbsp pav bhaji masala
     1/2 tsp hot n sweet sauce (combine ketchup & sriracha)
     1 tsp dhaniya powder
     lehsun adrak paste
     finely chopped coriander
     little lemon juice
Once butter is completely melted, add paste and saute for 5 seconds.
Immediately add 1 cup water. Allow paste to come to boil


Pour tadka masala into tomato paste.
Add mashed boiled veges
Let the mixture simmer in open pan for 30-60mins

Adjust salt, lemon, pav bhaji masala to taste
Adjust water to right consistency

Garnish with coriander
Serve hot with onions & hot buttered pav! :D

Followed exactly per recipe - only substituted butter for olive oil (for masala) & margarine (for pav)!

Tom Yum Soup!!!

I replaced Kaffir lime leaves for basil & used lemongrass paste instead of stalks! Also use Better than Bouillon vegetable stock. Also I pan fry the tofu with a little bit of salt n pepper first so that it has a firmer texture.
